Cookery Guides.


This is the Island Chef’s library of cookery guides you can download for free! It includes sample menus I prepared and cooked for clients, cookery guides based on courses I designed and taught, and more. Please have a browse and download for free. You can also download individual recipes from the Recipes by The Island Chef.

We are all dependent on food and drink. The art, science,, and skill of cooking has become a much loved activity. For the home cook, the skills passed down from mothers and fathers, for others they may have learnt at school, and some have self taught themselves.

The information about cooking is available everywhere, books, radio, television and most of all the Internet. The range of recipes, styles, countries and cooks is growing daily. Diets also add to the diversity of cooking. So there is an endless feed of information available.

I have amassed several shelves of cookery books and always search the internet for different recipes and ideas. All this information has inspired me to extend the range of food I cook for myself and my clients! It also enables me to create courses with a variation of recipes and always something different. Canapes was one area I had not explored, but they are now a key part of my repertoire and what I now offer to clients. I made over 3500 for a single event for a client. This was thirty different recipes for over 100 people.

The guides are a short form of courses like my BBQ Masterclass, and others that I developed for the WI Cookery School as was. Sadly, it was closed after Covid. I have developed bespoke courses for clients which are a half day or a full day. These include Pasta Making and Sauces. These are core skills that are essential for the chef or cook today.

Other guides are about ingredients, local or globally sourced, food and drink issues and more. There is so much about cooking, the processes of cooking that mean you always can learn more about the food you can prepare, cook and serve for family and friends!
